Is obtained by a careful and scrupulous selection of the best grapes of Trebbiano Toscano and Malvasia del Chianti that after harvest are left to dry on racks until December. After a soft pressing, the must is introduced into the barrels (wooden barrels with a capacity between 100 and 200 liters) where it will be a long, slow fermentation and therefore the aging process that will continue for at least four years.
The result of this long process is a precious wine, meditation, brilliant amber yellow color. Fine, intense and varied with countless scents ranging from apricot jam to peach with notes of almond. It has a soft and intense taste, very persistent, with an aftertaste of dried fruit notes and toasted wood.
At the service temperature of 18-20 ° C lends itself to pairings with pastries like Cantuccini di Prato (Traditional Tuscan biscuits with almond), but also a meditation on its own at any time and for every occasion.
